Dinner at the Taj

 

Cucumber Salad with Currants & Peanuts

2 large cucumbers, peeled and thinly sliced

Vinaigrette:
2 tablespoons water
2 tablespoons vinegar
2 teaspoons sugar
salt and pepper to taste

1/4 cup dried currants
1/4 cup chopped roasted peanuts

Place cucumbers in a covered bowl and refrigerate for several hours. In a glass jar shake together next 5 ingredients until sugar is dissolved. Before serving, remove cucumbers from the refrigerator and drain thoroughly. Toss with the Vinaigrette and sprinkle with currants and peanuts. Serves 6.
