Indian Vegetable Dipping Sauce

A dipping sauce or "salsa" can be created around any cuisine. Use the spices and seasonings that are commonly used in that country; use a native bread, and you will have a light and delicious start to an ethnic meal. Sauce can be prepared earlier in the day and stored in the refrigerator.

1 small onion, minced
5 cloves garlic, minced
3 medium tomatoes, peeled, seeded and chopped
1/2 small cucumber, seeded and grated, about 1/2 cup
2 tablespoons lemon juice
1 teaspoon curry powder
1 teaspoon oil
salt and pepper to taste

In a bowl, stir together all the ingredients until blended. Cover bowl and refrigerate until serving time. Serve with Toasted Pita Triangles. Yields about 2 1/2 cups sauce.

To Toast Pita Triangles:
Separate 3 pita breads into halves. Brush each half lightly with melted butter and sprinkle with a little garlic powder. With scissors, cut each half into 6 wedges. Place on a cookie sheet and bake at 350° for about 8 minutes or until triangles are crisped. Yields 36 chips.
