
Garbanzos make an excellent side-dish. My Mom served these
in so many ways...with tomatoes, onions.. in spinach, rice and
more. The combinations are endless. Here, they are flavored with
tomatoes and onions and spiced with curry and cumin.
2 tablespoons butter
1 onion, finely chopped
4 cloves garlic, minced
1 can (1 pound) stewed tomatoes, chopped. Do not drain.
2 cans (15 ounces, each) garbanzos, rinsed and drained
2 teaspoons ground curry powder (or more to taste)
1 teaspoon ground cumin powder
salt to taste
In a covered saucepan, saute onion and garlic in butter until onion is transparent. Add the remaining ingredients and simmer mixture for 30 minutes. Serves 6.
