
This is a most delicious accompaniment to dinner in an Indian mood. It is beautiful to behold and the fried onions add the nicest flavor.
1 onion, coarsely chopped
4 cloves garlic, minced
2 tablespoons butter
1 cup red lentils, rinsed and picked over for foreign particles
2 cups chicken broth
1 can (1 pound) stewed tomatoes, drained and chopped
1 teaspoon ground turmeric or more to taste
1/2 teaspoon ground cumin
salt and pepper to taste
In a saucepan, saute onion and garlic in butter until onion is beginning to take on color. Stir in the remaining ingredients, cover pan, and simmer mixture for 45 minutes, or until lentils are tender and most of the liquid is absorbed. Stir in the fried onions and heat through. Serves 6.
To make Fried Onions:
Cut 1 medium onion in half lengthwise. Thinly slice each half
into thin half rings. Dust lightly with flour. Fry onions in 2
tablespoons oil until golden brown. Remove from pan and drain
on paper towels.
