
A delicious combination of spices, color and texture. Rice can be prepared earlier in the day and heated before serving. Sprinkle with a few teaspoons of broth when reheating.
1 cup rice
2 cups chicken broth
1 tablespoon butter
1 teaspoon ground turmeric
salt and pepper to taste
1/2 cup currants, plumped in boiling water for 5 minutes,
and drained
1/2 cup toasted shelled cashew nuts or almonds, coarsely chopped
In a covered saucepan, simmer together first 6 ingredients for 30 minutes, or until rice is tender and liquid is absorbed. Stir in currants and nuts and heat through. Serves 6.
