Dinner at the Taj


Yellow Rice Indienne with Raisins & Pistachio Nuts

A delicious combination of spices, color and texture. Rice can be prepared earlier in the day and heated before serving. Sprinkle with a few teaspoons of broth when reheating.

1 cup rice
2 cups chicken broth
2 tablespoons oil
1 teaspoon ground turmeric or more to taste
1/2 teaspoon ground cumin
salt and pepper to taste

1/2 cup raisins, plumped in boiling water for 5 minutes, and drained
1/2 cup toasted shelled pistachio nuts or almonds, coarsely chopped

In a covered saucepan, simmer together first 7 ingredients for 30 minutes, or until rice is tender and liquid is absorbed. Stir in raisins and nuts. Serves 6.
