
GENERAL RULES:
1. Keep portions very small. It is important that you keep
portions petite and delicate.
2. Use the thinnest-sliced bread you can find. Cut off the crusts
and cover one side of each slice with a film of butter.
3. Spread a thin coating of filling on top of the butter and top with another slice of bread, buttered-side down.
4. Cut each slice into 4 small squares or 4 small triangles. Each slice of bread will produce 2 small sandwiches.
5. Figure 6 small sandwiches per person.
6. If you prefer to use small cookie cutters in attractive or seasonal shapes, that is fine.
Cucumber & Chives:
Peel cucumber, cut in half lengthwise and scoop out the seeds.
Slice cucumber on the slicing side of a 4-sided grater. (This
will produce the thinnest shaved slices.) Place a thin layer of
cucumber on the bread and sprinkle with chives.
Smoked Salmon & Dill:
Spread bread with a thin slice of salmon and sprinkle with a pinch
of dill.
Goat Cheese & Sun-Dried Tomato:
Mash goat cheese with a little sour cream and spread on bread.
Place a thin sliver of sun-dried tomato on top.
Turkey & Cranberry Sauce:
Place a thin slice of turkey on the bread and spread a thin coating
of cranberry sauce.
Ham with Honey Mustard:
Spread each slice of bread with Honey Mustard. Cover with a thin
slice of baked ham.
