Apples with cranberries make a nice Winter compote. This one is fruity, on the tart side, and a lovely accompaniment to the lamb and bulgur. This can be served slightly chilled or at room temperature.
4 large apples, peeled, cored and sliced
3/4 cup orange juice
1/2 cup cinnamon sugar
2 tablespoons lemon juice1 1/2 cups fresh or frozen cranberries
In a covered Dutch oven casserole, simmer together first 4 ingredients for 15 minutes. Add the cranberries and continue cooking for about 8 minutes or until cranberries are popped. Serves 6.
