Royal Rhubarb & Strawberry Compote
 
This simple but very delicious compote is always a pleasure to serve. It is tart, fruity and refreshing. Make extras as almost everyone takes seconds.
 
1 bag (20 ounces) frozen rhubarb
1/2 cup orange juice
1/2 cup sugar
2 tablespoons lemon juice
1 package (12 ounces) frozen strawberries
 
In a saucepan, simmer together first 3 ingredients until rhubarb is tender, but not mushy, about 10 minutes. Add the strawberries, and simmer compote for 2 minutes. Serves 6.
